Spiced Apple Cupcakes with Sweet Coconut Frosting

Recipe by Amie Forster   In the mood for cupcakes? When aren't we? Luckily these Spiced Apple Cupcakes with Sweet Coconut Frosting are sugar-free!

Ingredients

Cupcakes

1 ¼ Cups Gluten Free Plain Flour

1 Cup Natvia

1 Tsp. Baking Powder

1 Tsp. Cinnamon

¼ Tsp. Nutmeg

¼ Cup Coconut Oil

2 Eggs

1 Tsp. Vanilla Essence

¼ Cup Almond Milk

1 Large Apple- shredded

 

Frosting

1 Can Coconut Milk (left in the fridge overnight)

1 ½ Tbsp. Natvia

1 Tsp. Cinnamon

Method

  1. Pre-heat oven to 170 degrees C.
  2. Combine flour, Natvia, baking powder, cinnamon and nutmeg in a bowl, set to one side.
  3. In a separate bowl or jug mix coconut oil, eggs, vanilla and almond milk. Add wet ingredients to dry ingredients and mix well- add the apple and continue to mix.
  4. Add mixture to bun cases- 1 ½ teaspoons per bun case. Pop in the oven for 25 minutes.
  5. Whilst the cupcakes are cooking you can make the frosting- Take coconut milk from the fridge and scoop out the hard part into a bowl- DO NOT use the liquid part.
  6. Using a hand mixer beat the coconut milk until soft and fluffy. Add Natvia and cinnamon and beat for another minute. Place back in the fridge until later on.
  7. Once the cupcakes are done, remove from the oven and leave to cool completely. Once cooled frost each cupcake with the sweet coconut frosting. Store in an airtight container for up to 3 days.
