SWEET IRISH SODA BREAD COOKIES WITH FENNEL AND GOLDEN RAISINS

INGREDIENTS

  • 2 cups all-purpose flour
  • 0.75 cup Natvia
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter -cold
  • 1 tablespoon orange zest
  • 1/4 cup buttermilk
  • 1 egg
  • 2 tablespoons fennel seeds
  • 0.75 cup golden raisins (or regular)

2 cups/500 ml all-purpose flour

3/4 cup/180 ml Natvia

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup/113 ml butter -cold

1 tbsp. orange zest

1/4 cup/60 ml buttermilk

1 egg

2 tbsp. fennel seeds

3/4 cup/180 ml golden raisins (or regular)

METHOD

  1. Preheat the oven to 350 degrees F/180 degrees C.
  2. Place dry ingredients in a food processor bowl and blitz a few times.
  3. Add butter and blitz until mixture resembles a coarse meal.
  4. Add in a beaten egg, buttermilk and orange zest and mix enough to make a soft dough (may need a little more milk)
  5. Stir in golden raisins and fennel seeds.
  6. On a floured surface knead lightly 5 or 6 times.
  7. Using an ice cream scoop or tablespoon-scoop the dough and form into balls.
  8. Flatten with the back of a spoon or your hand to ¼ inch thick.
  9. Place on a cooking sheet sprayed with non-stick spray and
  10. Bake for 12 to 14 minutes or until slightly browned.
  11. Enjoy!!
