Sweet Shamrock Soda Bread

INGREDIENTS

  • 1 cups milk
  • 1-2 tbs vinegar
  • 3 cups SR flour
  • 1 tbs Natvia
  • 1 tsp bi carb soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 40g butter, chilled and cubed
  • Rolled oats for decoration

METHOD

  1. Make the buttermilk by combining the milk with vinegar and leaving to stand for 10-15 minutes.
  2. Combine the flour, soda, baking powder, salt. Place in a food processor with the cubed butter and process until it forms coarse breadcrumbs. Pour in the buttermilk and pulse until a ball forms
  3. Lightly knead and then roll out. Using a heart shaped cookie cutter cut into 3 hearts. Roll a long piece out for the shamrock stem.
  4. Sprinkle with rolled oats and bake at 180C for for 10 -15 minutes
