  • Makes 9 truffles
Metric | Imperial Measurement Conversions

INGREDIENTS

50g Pineapple (canned or fresh)

80g Apricot

65g Cashew

2 tbsp Coconut Flour

2 tbsp Coconut Oil

2 tsp Natvia

1 1/2 tbsp white chia seeds

35g desiccated Coconut

50g Goji Berries

METHOD

  1. Mix the cashew and apricot in food processor.
  2. Add pineapple, coconut flour, coconut oil, Natvia, chia seeds, desiccated coconut into the mix and combine with food processor.
  3. Add Goji berries and mix until even.
  4. Roll into bite size.
  5. Prepare extra goji berries (crushed in food processor), desiccated coconut, and chia seed for coating and roll.
