Serves: 6 - 8 Prep: 20 - 25 minutes Cook: 25 minutes INGREDIENTS 100g Natvia sweetener 140g dairy-free butter (melted) 400g gluten-free oats 3 tbsp. chia seeds 80g goji berries 100ml coconut milk 200g vegan dark chocolate METHOD Pre-heat the oven to 180C degrees. Using a large mixing bowl, pour the Natvia sweetener, oats, chia seeds and goji berries and stir to combine the ingredients together. Melt the butter and pour over the oats along with the coconut milk and stir thoroughly to combine the ingredients together. Pour the flapjack mixture into a tray lined with greaseproof paper (a 26x20x5 tin) place in the oven and bake for 25-30 minutes. Once the flapjacks have baked through, allow them to cool completely. Melt the dark chocolate over hot water, pour over the cold flapjacks and place in the freezer for 15-25 minutes to allow the chocolate to set. Cut into even squares. Nutritional Info
