INGREDIENTS
- 1 cup macadamias
- 10 chopped pitted dates
- 1/2 tsp Vanilla Extract
- 2 tbsp Du Chocolat
- 1 tbsp Hot water
- 120g Dark chocolate melted
Filling
- 3/4 cup Cashews, soaked overnight
- 1/3 cup Coconut Cream chilled overnight
- 1/3 cup Coconut oil melted
- 1 tbsp Natvia
- 2 tbsp Du Chocolat
METHOD
- Preheat oven to 175C.
- For the filling, place the ingredients and a pinch of salt in a blender and blend until smooth and creamy.
- Move mixture into a bowl and place in the fridge to set while you make the biscuits.
- Place macadamias, dates, vanilla, Du Chocolat and hot water in a food processor. Blend until mixture is smooth.
- Form the mixture into a ball. Place the ball between two sheets of baking paper and roll out until thin.
- Remove the top sheet of baking paper and cut the mixture into even rectangles. Bake for 10 minutes or until golden.
- Once cooked, move the biscuits onto a cooling rack.
- To assemble, spread half of the biscuits with the filling and then top with remaining biscuits.
- Dip each biscuit into the melted chocolate and place in the fridge to set.
