Very Berry Breakfast Muffins

Serves: 15 - 18

Ingredients

200 g Oats

200 g Self-raising Flour

75 g Natvia

2 Eggs

1 Medium Banana

250 mls Almond Milk

1 tablespoon Vanilla

50 g Blueberries

50 g Raspberries

50 g Strawberries

Method

  1. Pre-heat oven to 180 degrees C and prepare your muffin cases.
  2. Blend banana, eggs, milk and vanilla until a completely smooth and runny mixture is formed; pop to one side.
  3. In a medium bowl m ix all dry ingredients together.
  4. Add wet ingredients you be blended earlier and mix well.
  5. Add berries and fold them into the mixture.
  6. Bake for 20-15 minutes. Remove from the oven and leave to cool completely.
  7. Store in an airtight container in the fridge for up to 5 days.
