
Berry Ice Cream Bars

With a wholesome oat base, a fruity yogurt centre, and a dreamy white chocolate top (plus a pop of freeze-dried berries!), these bars, recipe by Pamela Higgins, are the ultimate nourishing indulgence: no added sugar, no oven, just pure feel-good flavour.

Ingredients
For the base:
- 100g oats
- 2 tablespoons coconut oil
- 2 tablespoons nut butter
- 2 tablespoons Natvia Stevia Synbiotic Sweetener 250g.
For the berry layer:
- 1 banana
- 100g mixed frozen berries
- 2 tablespoons natural / coconut yogurt
- 1 tablespoon Natvia Stevia Synbiotic Sweetener 250g.
For the topping:
- 1 tablespoon coconut oil
- 60g no added sugar white chocolate, broken up into pieces
- Freeze-dried strawberries
Method
- Melt the coconut oil and nut butter then stir in the Natvia and oats. Mix well, then divide between 8-9 silicone individual bar molds to fill ⅓ of each. Press down well.
- Next blend the banana, berries, yogurt and Natvia with a dash of water to form a thick but smooth ‘smoothie’ texture. Spoon this over the base and fill to nearly the top of each. Freeze for 1 hour.
- Melt the coconut oil and white chocolate then spoon over each to cover. Sprinkle over freeze-dried strawberries (break some into pieces) then return to the freezer for a further 2 hours to fully set.
- When ready to enjoy, remove from the freezer 5 minutes beforehand then enjoy!
