Pavlova Base
- 4 large egg whites (room temperature)
- 1 cup (200g) caster sugar
- 1 tsp white vinegar
- 1 tsp cornstarch (cornflour) - ensure gluten-free
- 1 tsp vanilla extract
Coconut Cream Topping
- 1 can (400ml) full-fat coconut milk, chilled overnight
- 1–2 tbsp powdered icing sugar or Natvia Gut Activation (optional)
- 1 tsp vanilla extract
Mixed Fruit Toppings (choose any combination)
- Mango slices
- Pineapple chunks
- Kiwi slices
- Passionfruit pulp
- Strawberries (halved)
- Blueberries
- Raspberries
- Blackberries
- Pomegranate seeds
- Fresh mint leaves (optional)
- Lime zest (optional)
Method
- Preheat oven to 150°C (300°F). Line a baking tray with baking paper.
- Make the pavlova base:
In a clean, dry bowl, whisk egg whites until soft peaks form.
Gradually add caster sugar, whisking constantly until stiff, glossy peaks form.
Gently fold in vinegar, cornstarch, and vanilla extract.
- Shape and bake:
Spoon or pipe the mixture onto the tray in a circle about 20cm wide, creating a slight well in the center.
Bake for 1 hour. Then turn off the oven and leave the pavlova inside to cool completely (about 1 hour).
- Prepare the coconut cream topping:
Scoop the thickened cream from the chilled coconut milk can into a bowl (leave watery part behind).
Whip with a hand or stand mixer until light and fluffy.
Add icing sugar or Natvia and vanilla extract, then whip to combine.
- Assemble the pavlova:
Spread or pipe the whipped coconut cream over the cooled pavlova base.
Arrange your chosen fresh fruits on top.
Garnish with fresh mint leaves and a sprinkle of lime zest if desired.
- Serve immediately and enjoy your allergy-friendly festive pavlova!
