Pancake with Toffee Apple Pie Sauce

Pancake Day is the perfect excuse to slow down and make something fun together. These delicious Toffee Apple Sauce crepes recipe by Jelena Fairweather are made for sharing around the table on a weekend morning, as they are simple, familiar, and a little special.

Ingredients

Pancake:

  • 175g all-purpose flour
  • 3 eggs
  • 1 tsp baking soda
  • 1 tsp Natvia Synbiotic Sweetener (UK) / Natvia Gut Activation Sweetener (AU)
  • 450ml whole milk
  • Light-coloured olive oil for frying (or coconut oil)

Toffee Apple Sauce:

  • 60g butter
  • ¼ cup Natvia Synbiotic Sweetener (UK) / Natvia Gut Activation Sweetener (AU)
  • 110ml heavy cream
  • Pinch of sea salt
  • 1 large apple


Recipe Method

Make the pancake batter:

  1. In a large bowl, add the milk, eggs, and sweetener. Whisk until well combined.
  2. Sift in the flour and baking soda, add a small splash of oil, and whisk until smooth.
  3. Set the batter aside to rest while preparing the sauce.

Make the apple sauce:

  1. Add the butter to a small saucepan and melt over low heat until browned, about 5 minutes.
  2. Stir in the sweetener, heavy cream, and salt until combined.
  3. Simmer gently over very low heat for 15 minutes, without stirring.
  4. Add chopped apple pieces, stir through, then set aside.

Make the crepes:

  1. Heat a large non-stick frying pan over medium heat and lightly grease.
  2. Pour in a small amount of batter, swirling the pan to spread evenly.
  3. Cook until the edges lift and peel away from the pan, then flip and cook briefly on the other side.
  4. Repeat with the remaining batter.

Serve warm with the toffee apple sauce and enjoy!
