Salted Caramel Banana Bread

Banana bread did not need improving, and then someone flipped it upside down over a layer of salted caramel. This one starts with fresh banana slices in the base of the tin, blanketed in a quick homemade salted caramel made with Natvia Brown Sweetener instead of sugar, so you get all the deep toffee flavour without the added sugar. The batter goes on top, and when you turn the loaf out after baking, those caramel bananas become a glossy, sticky crown. It is the kind of bake that looks like real effort but leans on the same overripe bananas you were going to use anyway. The caramel takes about five minutes on the stove and the rest is standard banana bread territory. Serve it warm with a cup of tea, or sneak a slice straight off the cooling rack. Nobody will judge you for going back for seconds.

Ingredients:

SALTED CARAMEL

  • 65g (⅓ cup) Natvia Brown Sweetener
  • 40g (3 tbsp) unsalted butter, room temperature, cut into pieces
  • 60ml (¼ cup) heavy cream, room temperature
  • ½ tsp salt

BANANA BREAD

  • 140g softened butter
  • 95g Natvia Brown Sweetener
  • 2 large eggs, beaten
  • 140g plain flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 ripe bananas (2 mashed, 1 sliced for the base)

Methods:

  1. Heat the oven to 180°C (160°C fan) and line a loaf tin.
  2. Arrange the banana slices in the base of the lined loaf tin (however you like).
  3. Melt the Natvia Brown Sweetener in a saucepan over medium heat, stirring occasionally, until fully dissolved and bubbling.
  4. Add the butter piece by piece, whisking until smooth and glossy.
  5. Slowly pour in the cream while whisking, then let it simmer for a minute until slightly thickened.
  6. Remove from the heat and stir through the salt.
  7. Pour the caramel evenly over the bananas and leave for 2 to 3 minutes while you make the batter.
  8. Mash the bananas. Add in the softened butter and Natvia Brown Sweetener and beat until combined.
  9. Gradually beat in the eggs.
  10. Fold in the flour, baking powder and baking soda.
  11. Spoon the batter gently over the caramel bananas and smooth the top.
  12. Bake for 45 to 55 minutes, until a skewer comes out clean.
  13. Allow to cool slightly before turning out so the caramel bananas end up on top.
