This Strawberry & Lime Cashew Mousse is a refreshing, dairy-free delight. By blending creamy, protein-rich cashews with the zest of fresh lime and the natural sweetness of strawberries, you get a velvety dessert that feels indulgent but is completely plant-based and sugar-free.

Ingredients

  • 300g (10 oz) Fresh strawberries, hulled and sliced
  • 1 ½ cups (187g) Raw cashews, soaked overnight in water and drained
  • 3 Fresh limes, juiced
  • 1 tablespoon (14g) Natvia Gut Activation Sweetener
  • ¼ cup (60ml) Coconut oil, melted

Recipe Method

  1. Begin by pureeing the sliced strawberries in a blender or food processor until completely smooth. Pass the mixture through a fine-mesh strainer to remove the seeds for a silkier finish.
  2. Place the soaked and drained cashews into a high-speed blender or food processor. Add the lime juice, the strained strawberry puree, and the Natvia. Process the mixture on high until it reaches a completely smooth and creamy consistency.
  3. While the processor is running on low, slowly pour in the coconut oil and continue to blend until it is fully incorporated into the mousse.
  4. Transfer the mixture into six individual serving ramekins or containers.
  5. Place the containers in the refrigerator for at least 2 to 4 hours, or until the mousse has set to your desired consistency.
