Valentine's Shortbread Cookies

Valentine’s doesn’t have to be complicated to feel special. Bake something easy this coming weekend. Naturally sweetened Shortbread Cookies by Jelena Fairweather are made for sharing at home and celebrating love in the most delicious way.

Ingredients

  • 5 tbsp Natvia Synbiotic Sweetener (UK) / Natvia Gut Activation Sweetener (AU).
  • 100g unsalted soft butter
  • 2 eggs
  • 1 tsp vanilla extract
  • 300g plain flour
  • Pinch of salt

Recipe Method

  1. In a bowl, beat the butter and sweetener until light and fluffy.
  2. Add the eggs one at a time, beating well after each addition, then mix in the vanilla.
  3. Gradually add the plain flour and salt, mixing until the dough comes together.
  4. Cover and chill the dough in the fridge for 30 minutes.
  5. Roll the dough out to about 6mm thick and cut into heart-shaped cookies.
  6. Place on a lined baking tray and bake at 180°C for 8–10 minutes, until just set.
  7. Allow the cookies to cool on the tray for 15 minutes before decorating.

Preparation Time

Prep time:
15 minutes (creaming butter and sweetener, mixing the dough, rolling and cutting cookies)

Cook time:
8–10 minutes (baking the cookies until just set)

Chill time:
30 minutes (resting the dough in the fridge for easier rolling and better shape)

Total time:
~55 minutes (including chilling, baking, and initial cooling)

Servings:
20–24 cookies (depending on cutter size and dough thickness)
