INGREDIENTS

  • 1 ½ cups aquafaba
  • ¾ cup Natvia, blitzed in a food processor
  • ½ tsp xanthum gum
  • ½ tsp vanilla extract
  • Fresh berries & cream for decorating

METHOD

  1. Preheat the oven to 90C
  2. Beat the aquafaba for 10 minutes, until firm peaks form
  3. Fold in the Natvia, xanthum gumand vanilla.
  4. Dollop onto a baking paper lined oven tray.
  5. Bake for 2 ½ hours. Stand in the oven overnight.
  6. Decorate with fresh berries & cream
