
Chocolate Chunk Chickpea Peanut Butter Cookies

Ingredients
- 1 can of chickpeas, drained and rinsed
- 3 tablespoons nut butter
- 3 tablespoons oat milk
- 30g cocoa powder
- 70g Natvia Sweetener Stevia Synbiotics 250g
- 70g gluten-free flour
For the Drizzle:
- 2 tablespoons Natvia Sweetener Canister 350g (blended to mimic icing sugar)
- 1 tablespoon nut butter
- Chopped nuts, to decorate
Method
- In a blender, combine the chickpeas, nut butter, and oat milk, and blend until mostly smooth.
- Add the cocoa powder, Natvia Sweetener Stevia Synbiotics 250g, gluten-free flour, oats, vegan protein powder, and baking powder. Blend again until a thick dough forms.
- Stir in the protein bar chunks. Divide the dough into 9-12 pieces, roll them into balls, and press each ball gently onto a lined baking tray.
- Bake at 180°C for 10-12 minutes. Allow the cookies to cool completely.
- Once cooled, mix Natvia Sweetener Stevia Synbiotics 250g (Granulated) with nut butter and a small dash of water to create a thick drizzle.
- Drizzle over each cookie and sprinkle with chopped nuts. Set aside for 30 minutes to firm up before enjoying!
