Healthy Muesli Slice

Ingredients

90g/3 oz Natvia 75g/2.5oz Brown rice flour 45g/1.5oz shredded coconut 160g/5.5oz Gluten free Ancient Grain cereal 75g/2.5oz Organic coconut oil 3 egg whites

Method

  1. Turn oven to 180°C (conventional oven).
  2. Heat coconut oil in a large microwave safe bowl for 30 seconds (until clear and runny).
  3. Add to all dry ingredients and egg whites to oil and mix thoroughly.
  4. Press mixture into a small baking tray lined with baking paper.
  5. Cook in oven for 20 minutes (until golden brown on edges).
  6. Remove from oven and cool to room temperature.
  7. Cut into 12 even slices & store in fridge for up to 7 days
