Healthy Muesli Slice
Ingredients
90g/3 oz Natvia 75g/2.5oz Brown rice flour 45g/1.5oz shredded coconut 160g/5.5oz Gluten free Ancient Grain cereal 75g/2.5oz Organic coconut oil 3 egg whites
Method
- Turn oven to 180°C (conventional oven).
- Heat coconut oil in a large microwave safe bowl for 30 seconds (until clear and runny).
- Add to all dry ingredients and egg whites to oil and mix thoroughly.
- Press mixture into a small baking tray lined with baking paper.
- Cook in oven for 20 minutes (until golden brown on edges).
- Remove from oven and cool to room temperature.
- Cut into 12 even slices & store in fridge for up to 7 days
