MINI APPLE & PEANUT CRUMBLE POTS

Recipe by Pamela Higgins Small but full of flavour, get around these mini apple and peanut crumble pots. They're perfect as an after dinner treat!

Prep: 30 minutes

Ingredients

For the apples -

2 large apples, peeled and sliced

3 tablespoon Natvia natural sweetener

Juice of 1 lemon

For the crumble topping -

100 g rolled oats

50 g peanuts

2 tablespoon solid coconut oil

1 tablespoon peanut butter

6 tablespoon Natvia natural sweetener

Method

  1. First place the apples, Natvia and lemon juice in a pan and cook for 10 minutes until softened.
  2. Meanwhile place the crumble ingredients into a blender and pulse a few times until crumbly and sticks together.
  3. Divide the apples between two ramekin pots then scatter over a generous layer of the crumble. Now serve and enjoy!
