
Pistachio, White Chocolate & Banana Loaf

Ingredients
Ingredients:
- 2 ripe bananas, mashed
- 2 eggs
- 1 teaspoon vanilla extract
- 100g gluten-free flour
- 50g oat flour or almond flour
- 100g Natvia Sweetener Canister 350g
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 75g no added sugar white chocolate, cut into chunks
- 50g pistachios, shelled and chopped
For the drizzle:
- 3 tablespoons Natvia Sweetener Canister (Blended to replicate icing sugar)
- 1 tablespoon oat milk
- 1 teaspoon coconut oil
- 30g no added sugar white chocolate, cut into chunks
- Dried rose petals and extra chopped pistachios, to decorate
Method
- Preheat your oven to 180°C (350°F) and line a loaf tin with baking paper.
- In a bowl, mix together the mashed bananas, eggs, vanilla extract, gluten-free flour, oat or almond flour, Natvia Sweetener Canister 350g cinnamon, and baking powder until a smooth batter forms.
- Stir in the white chocolate chunks and chopped pistachios.
- Spoon the batter into the prepared tin and spread it out evenly.
- Bake for 30-40 minutes, or until golden and risen. Use a toothpick to check that the loaf is baked through.
- Let the loaf cool on a wire rack.
- For the drizzle: mix together the Natvia Sweetener Canister (blended to mimic icing sugar consistency) and oat milk. Gently melt the coconut oil and white chocolate, then stir into the icing mixture until smooth.
- Drizzle the white chocolate mixture over the cooled loaf and garnish with dried rose petals and extra pistachios.
- Slice and enjoy your delicious gluten-free, low-sugar banana loaf!
