“May the luck of the Irish be with you……”
Ingredients
- 2 cups/500 ml all-purpose flour
- 3/4 cup/180 ml Natvia
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup/113 ml butter -cold
- 1 tbsp. orange zest
- 1/4 cup/60 ml buttermilk
- 1 egg
- 2 tbsp. fennel seeds
- 3/4 cup/180 ml golden raisins (or regular)
Method
- Preheat the oven to 350 degrees F/180 degrees C.
- Place dry ingredients in a food processor bowl and blitz a few times.
- Add butter and blitz until mixture resembles a coarse meal.
- Add in a beaten egg, buttermilk and orange zest and mix enough to make a soft dough (may need a little more milk)
- Stir in golden raisins and fennel seeds.
- On a floured surface knead lightly 5 or 6 times.
- Using an ice cream scoop or tablespoon-scoop the dough and form into balls.
- Flatten with the back of a spoon or your hand to ¼ inch thick.
- Place on a cooking sheet sprayed with non-stick spray and
