Sweet Irish Soda Bread Cookies with Fennel and Golden Raisins

Ingredients

2 cup all-purpose flour

0.75 cup Natvia

0.5 teaspoon baking soda

0.5 teaspoon salt

0.5 cup butter -cold

1 tablespoon orange zest

0.25 cup buttermilk

1 egg

2 tablespoon fennel seeds

0.75 cup golden raisins (or regular)

Method

  1. Preheat the oven to 350 degrees F/180 degrees C.
  2. Place dry ingredients in a food processor bowl and blitz a few times.
  3. Add butter and blitz until mixture resembles a coarse meal.
  4. Add in a beaten egg, buttermilk and orange zest and mix enough to make a soft dough (may need a little more milk)
  5. Stir in golden raisins and fennel seeds.
  6. On a floured surface knead lightly 5 or 6 times.
  7. Using an ice cream scoop or tablespoon-scoop the dough and form into balls.
  8. Flatten with the back of a spoon or your hand to ¼ inch thick.
  9. Place on a cooking sheet sprayed with non-stick spray and
  10. Bake for 12 to 14 minutes or until slightly browned.
