Ingredients
Ingredients
- 2 salmon fillets, skin off, cut into 1-inch cubes
- 1 tbsp oil to cook
Marinade:
- 1/2 cup light soy sauce
- 1 tbsp Natvia Brown Sweetener 250g
- 2 tbsp rice vinegar
- 2 tbsp sriracha
- 1/2 tsp crushed ginger
- 1/2 tsp crushed garlic
To serve
- 1 cucumber finely chopped
- 2 shallots, finely chopped
- Asian salad dressing
- 1/2 Avocado sliced
- 2 cups cooked rice
- Sesame seeds
Method
- Prepare your marinade. Combine all ingredients and add to salmon in a bowl.
- Whilst salmon is marinating, prepare cucumber salad by mixing shallots, cucumber and dressing.
- Fry salmon bites for 2 minutes, then add sauce in and continue cooking for another 2 minutes so the sauce thickens up.
- Prepare 2 bowls and split salmon evenly on top of rice and cucumber:)
