Apple Turnovers

Golden, flaky and filled with warm spiced apple, these turnovers come together in under 35 minutes with store-bought puff pastry and a filling sweetened with Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK). They are wonderful straight from the oven and hold up just as well at room temperature, which makes them a great option for lunchboxes or morning tea too.

Ingredients:

  • 2 eating apples, peeled and finely diced
  • 1 tablespoon butter or margarine
  • 1 tablespoon Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK), plus extra for sprinkling
  • 1 teaspoon mixed spice
  • Juice of 1/2 lemon
  • 1 teaspoon cornflour
  • 1 x 375g sheet puff pastry, thawed if frozen
  • 1 egg, beaten

Method:

  1. Place the diced apple in a small saucepan with the butter, Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK) and mixed spice. Cook over medium heat for 5 to 7 minutes, stirring occasionally, until the apple has softened. Remove from the heat.
  2. Stir in the lemon juice and cornflour. Set aside to cool for 10 minutes.
  3. Preheat your oven to 190C (fan 170C). Line a baking tray with baking paper.
  4. Unroll the puff pastry on a lightly floured surface and cut into 6 equal squares.
  5. Place a heaped teaspoon of filling in the centre of each square, leaving a clear border around the edges.
  6. Brush the border of each square with beaten egg. Fold one corner diagonally to meet the opposite corner to form a triangle. Press the edges firmly together to seal, then crimp with a fork.
  7. Transfer to the lined tray. Brush the tops with more beaten egg and sprinkle over a little extra Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK).
  8. Bake for 15 to 20 minutes until deep golden and puffed. Serve hot or at room temperature.
