Avocado Lime Cheesecake
Ingredients
Base 80g walnuts 55g dates Topping Flesh of 2 ripe avocados Juice of 3 limes Zest of 2 limes Small bunch of mint leaves, finely chopped ¼ cup coconut cream ¼ cup coconut oil Pinch of salt 1/3 cup Natvia (blitzed) 1 scoop vanilla whey protein powder (optional, can use vegan)
Method
- Blend the walnuts and dates together until combined
- Place in the cheesecake pan and press down with fingers to form the base
- Refrigerate whilst you make the topping
- Add all the topping ingredients to a blender
- Blend until full incorporated
- Place the topping over the set base and spread with a spoon
- Cover with cling film and refrigerate for 3-4 hours to set
- Top with grated dark chocolate before serving
