Avocado Lime Cheesecake

Cheesecakes - they're one of the most diverse desserts. You can create just about every delicious dessert combination in the confines of that delicious crust and the absolutely, always delicious creamy texture. From chocolate to fruit, from cooking one in the oven to just sticking it in the fridge, there are so many possibilities when it comes to this dish. In fact, did you know 'cheesecake' spelled backward is 'opportunity'? Well not quite, but you get the point.
In this delicious rendition, Sumayya from
@proteinphat combines the refreshing flavours of avocado and lime into this refined sugar-free cheesecake, perfect for sharing, ideal for one.
Ingredients:
Base
Topping
- Flesh of 2 ripe avocados
- Juice of 3 limes
- Zest of 2 limes
- Small bunch of mint leaves, finely chopped
- ¼ cup coconut cream
- ¼ cup coconut oil
- Pinch of salt
- 1/3 cup Natvia (Icing mix)
- 1 scoop vanilla whey protein powder (optional, can use vegan)
Method:
Base:
- Blend the walnuts and dates together until combined
- Place in the cheesecake pan and press down with fingers to form the base
- Refrigerate whilst you make the topping
Topping:
- Add all the topping ingredients to a blender
- Blend until full incorporated
- Place the topping over the set base and spread with a spoon
- Cover with cling film and refrigerate for 3-4 hours to set
- Top with grated dark chocolate before serving
We made 3 x 8cm diameter individual cheesecakes. Recipe makes 1 x 9inch cheesecake
