Ingredients:

For the base:

  • 100g oats
  • 2 tbsp coconut oil
  • 2 tbsp peanut butter
  • 2 tbsp Natvia Gut Activation Sweetener / Natvia Synbiotic Sweetener (UK)

For the topping:

  1. 6 tbsp low sugar berry compote or jam
  2. 250g soft or cream cheese
  3. 4 tbsp Natvia Gut Activation Sweetener / Natvia Synbiotic Sweetener (UK)
  4. 2 tbsp cornflour
  5. 1 tsp vanilla extract

Method:

  1. Place the oats in a bowl. Melt the coconut oil and nut butter then stir in the Natvia and add to the bowl. Mix well to combine then press evenly into a greased and lined 9x9in baking tin.
  2. Spread the jam over the oat base to cover evenly.
  3. Beat together the cream cheese, Natvia, cornflour and vanilla extract until thick and smooth. Spread over the fruit layer.
  4. Bake at 180C for 25-30 minutes until golden and firmed up. Leave to cool completely then cut into bars and enjoy!
