
Chickpea Cookie Dough Protein Bars

Ingredients
For the base:
- 1 x can chickpeas, drained and rinsed
- 2 scoops vegan vanilla protein powder
- 2 tablespoons Natvia 100% Natural Sweetener
- 2 tablespoons oat milk
For the middle:
- 1 tablespoon coconut oil
- 1 tablespoon Natvia 100% Natural Sweetener
- 2 tablespoons peanut butter
For the topping:
- 3 tablespoons Natvia 100% Natural Sweetener
- 2 tablespoons cocoa powder
- 1 teaspoon smooth nut butter
- Granola, to sprinkle over
Method
- First make the base: Blend the chickpeas, protein powder, Natvia 100% Natural Sweetener and oat milk until thick and smooth and forms a cookie dough texture. Press into individual silicone molds to fill up to ⅓.
- Melt the coconut oil and nut butter then stir in the Natvia 100% Natural Sweetener. Spoon over the base of each one to cover then chill in the fridge for 1 hour.
- Mix together the icing sugar, cocoa powder, nut butter and a dash of water/enough to create a thick but slightly runny chocolate texture.
- Spoon over the top of each peanut butter layer to fill to the top. Sprinkle over granola then chill for at least 1 hour.
- Pop out of the mold when ready to eat and enjoy!
