Blueberry, White Chocolate & Cashew Blondies

Ingredients

100 g ground almonds

100 g oat flour

80 g Natvia

1 teaspoon baking powder

1 teaspoon cinnamon

100 g almond butter

180 mls almond milk

1 teaspoon vanilla extract

50 g sugar-free white chocolate, chopped

60 g cashew nuts, chopped

90 g fresh blueberries

Method

  1. Preheat the oven to 180 degrees C and grease and line a 9x9in baking tin.
  2. Mix together the ground almonds, oat flour, Natvia, baking powder and cinnamon in a bowl.
  3. Whisk together the almond butter, almond milk and vanilla well until smooth then pour into the dry ingredients and mix well to combine. Fold in the white chocolate chunks and cashew nuts.
  4. Spoon the mixture into the prepared tin and smooth out evenly. Scatter the blueberries over the top and press in lightly. Bake for 25 minutes until golden brown then leave to cool before cutting into 9-12 bars. Enjoy!
