Boxing Ring Cake

Ingredients
150 g unsalted butter, softened
2 eggs
200 g SR flour (1 ¼ cup)
25 g cacao powder (¼ cup)
150 g Natvia (¾ cup)
0.4 teaspoon baking powder
70 g milk (¼ cup)
Icing
150 g butter, softened
90 g Natvia, (½ cup) blitzed into a powder in the food processor
Blue food dye
Decoration
Colourful straws string, toothpicks, and boxing-themed cutouts
Method
- Beat the butter and Natvia until light and creamy
- Sift in the flour and cacao powder. Pour into a square lined 20cm baking dish. Bake for 35-40 minutes until a skewer inserted comes out clean
- Wait until cooled completely
- To make the icing beat the butter until light and fluffy add the Natvia and food dye
- Using a hot spatula cover the cake with icing. Smooth the top with a spatula dipped in hot water
- Make the fence by sticking in the straws at each end and tying string around it. Place your cut outs in the cake attached to toothpicks
