Boxing Ring Cake

Cook: 35 - 40 minutes

Ingredients

150 g unsalted butter, softened

2 eggs

200 g SR flour (1 ¼ cup)

25 g cacao powder (¼ cup)

150 g Natvia (¾ cup)

0.4 teaspoon baking powder

70 g milk (¼ cup)

Icing

150 g butter, softened

90 g Natvia, (½ cup) blitzed into a powder in the food processor

Blue food dye

Decoration

Colourful straws string, toothpicks, and boxing-themed cutouts

Method

  1. Beat the butter and Natvia until light and creamy
  2. Sift in the flour and cacao powder. Pour into a square lined 20cm baking dish. Bake for 35-40 minutes until a skewer inserted comes out clean
  3. Wait until cooled completely
  4. To make the icing beat the butter until light and fluffy add the Natvia and food dye
  5. Using a hot spatula cover the cake with icing. Smooth the top with a spatula dipped in hot water
  6. Make the fence by sticking in the straws at each end and tying string around it. Place your cut outs in the cake attached to toothpicks
