Caramel Banana Foster Parfait

Jelena Fairweather layered this one up and we have not stopped thinking about it since. Toasted oat crunch, cinnamon caramelised bananas and whipped cream, sweetened throughout with Natvia Gut Activation Sweetener. Dessert for two, gone in seconds.

Ingredients:

Oat Crunch

  • 50 g (½ cup) rolled oats
  • 30 g (¼ cup) almonds, roughly chopped
  • 15 g (2 tbsp) desiccated coconut
  • 15 g (1 tbsp) unsalted butter, melted
  • 1 tsp Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK)

Caramelised Bananas

  • 2 ripe bananas, sliced
  • 15 g (1 tbsp) unsalted butter
  • 1 tsp Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK)
  • ½ tsp ground cinnamon

Whipped Cream

  • 240 ml (1 cup) double cream
  • 1 tbsp Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK)
  • 2.5 ml (½ tsp) vanilla extract

Methods:

  1. Combine oats, chopped almonds, coconut, melted butter and Natvia Gut Activation Sweetener in a bowl and mix until well coated.
  2. Air fry at 160°C for 5 to 7 minutes until golden. Set aside to cool and crisp up.
  3. In a small pan over medium heat, melt butter with Natvia Gut Activation Sweetener and cinnamon.
  4. Add sliced bananas and cook for 2 to 3 minutes, turning gently, until caramelised and golden. Set aside.
  5. Add double cream, Natvia Gut Activation Sweetener and vanilla extract to a bowl and whip until soft peaks form.
  6. Spoon a layer of oat crunch into the base of each glass.
  7. Add a layer of whipped cream.
  8. Top with caramelised bananas.
  9. Repeat with another layer of oat crunch, whipped cream and bananas.
  10. Finish with a final scatter of oat crunch and a sprinkle of cinnamon. Serve immediately.
