Chocolate Cross Cookies
Ingredients
125 g Unsalted butter
150 g Natvia (3/4 cup)
1 large egg
1 teaspoon Vanilla essence
250 g Plain Flour (2 cups)
1.5 teaspoon baking powder
1 teaspoon Cinnamon
1 teaspoon Mixed spice
60 g Du Chocolat (1/4 cup)
125 g Milk (1/2 cup)
75 g Sultanas (1/2 cup)
150 g melted dark chocolate
For crosses
90 g Natvia (1/2 cup)
2 tablespoon Du Chocolat
Boiling water
Method
- Beat together unsalted butter and Natvia until light and fluffy.
- Add egg and vanilla and stir until combined.
- Add flour, baking powder, cinnamon, mixed spice, Du Chocolat, milk, sultanas and dark chocolate and beat until mixed.
- Roll dough into balls and placed on a lined baking tray.
- Bake for 20-25 minutes and then remove onto a wire tray to combine.
- For the cross, combine Natvia and Du Chocolat with enough boiling water to form a smooth icing. Spoon into a piping bag and pipe over cooled cookies.
