Coconut Macaroon Brownies

Ingredients
Brownie
3/4 Cup Natvia
30g Plain Flour
30g Coconut Flour
1/2 Tsp. Salt
2 eggs
100g Dark Chocolate
100ml Coconut Oil
1 Tsp. Vanilla
Top
1/2 Cup Desiccated Coconut
1 Egg White
1 Tsp. Vanilla
Method
- Pre-heat oven to 160 degrees C.
- Melt coconut oil and dark chocolate over a bowl of hot water. Once melted mix with Natvia and vanilla.
- Add eggs and continue to mix. Add flours and salt and mix well.
- Bake in a small brownie tin for 20 minutes. Whilst the brownie bakes you can make the coconut topping.
- In a bowl combine all topping ingredients and mix well. Take brownie out of the oven, spread the coconut mixture evenly over the top and place under the grill until it becomes golden brown (a few minutes).
- Remove and let cool completely. Store in an airtight container for no more than 3 days.
