Ingredients:

Pistachio filling

  • 260g pistachios
  • 17g Natvia Natural Sweetener
  • 1.3g salt
  • 17g vegetable oil
  • 140g toasted kataifi

Chewy Cookie Dough

  • 35g butter
  • 150g marshmallows
  • 20g Nativa Relax Hot Choc powder (dough)
  • 10g cocoa powder (coating)

Methods:

  1. Blend pistachios, sugar, salt, and oil for 15–20 minutes until a smooth paste forms. Work in batches and pause to avoid overworking your machine.
  2. Mix all the pistachio paste with the kataifi. Divide into 40g portions, roll into balls, and freeze briefly to firm up.
  3. Melt butter in a pan over low heat, then melt in the marshmallows. Sift in the skim milk powder and Relax Hot Choc powder and mix with a spatula.
  4. Transfer dough to baking paper and cool to room temperature. Divide into 20g portions.
  5. Wrap each kataifi ball in a portion of dough, then roll in cocoa powder to finish.
