Earl Grey is one of those flavours that works just as well in a cake as it does in a cup. Fragrant, floral and a little citrusy, it pairs beautifully with fresh lemon and orange zest and a homemade citrus soaking syrup that keeps every slice incredibly moist. This loaf is sweetened with Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK) and comes together with minimal fuss. Elegant enough for afternoon tea, easy enough for a quiet Sunday bake.

Ingredients:

  • 4 eggs
  • 180g softened semi-salted butter
  • Zest of 1 lemon and 1 orange
  • Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK), equivalent to 150g sugar
  • 150g natural yoghurt, full-fat works best
  • 220g plain flour
  • 30g Earl Grey tea leaves, finely crushed
  • 8g baking powder

Citrus Syrup

  • Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK), equivalent to 50g sugar
  • 50g lemon juice
  • 60g orange juice

Method:

  1. Ensure all ingredients are at room temperature before you begin.
  2. Cream the butter, Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK) and citrus zest together until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir through the yoghurt.
  4. Fold through the flour, baking powder and crushed Earl Grey tea leaves until just combined.
  5. Pour into a greased and lined loaf tin and bake at 170C for around 1 hour, or until a skewer inserted into the centre comes out clean.
  6. While the cake is still warm, combine the Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK), lemon juice and orange juice in a small saucepan. Bring to a boil, then drizzle over the warm cake and allow it to soak in completely before slicing.
