Ingredients:

  • 150g dark chocolate
  • 120g unsalted butter or dairy-free alternative
  • 3/4 cup Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK)
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup gluten-free flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon gluten-free baking powder
  • 1/2 teaspoon salt
  • 3/4 cup roasted hazelnuts, roughly chopped

Methods:

  1. Preheat your oven to 170C (fan 160C). Line a square baking tin with baking paper.
  2. Melt the dark chocolate and butter together gently, either in the microwave in short bursts or over a bain-marie. Stir until glossy and smooth, then set aside to cool slightly.
  3. Whisk in Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK), then add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In a separate bowl, combine the gluten-free flour, cocoa powder, baking powder and salt.
  6. Fold the dry ingredients into the chocolate mixture until just combined.
  7. Fold through the roasted hazelnuts.
  8. Pour into your prepared tin, smooth the top and scatter a few extra hazelnuts over the surface.
  9. Bake for 20 to 25 minutes until the top is set but the centre still has a slight wobble.
  10. Cool completely in the tin before slicing into 9 to 12 pieces.
