Ingredients
250g almond meal (almond flour, ground almonds
100g Natvia
½ teaspoon almond extract
½ lemon zested
Pinch of salt
2 small egg whites
3 tablespoons Natvia blended to the 'confectionery' style powder
Almonds to decorate
Method
Preheat oven to 170C fan .
Line a tray with baking paper.
In the food processor add Natvia and blend it to the powder texture, set aside.
Whisk the egg whites until fluffy. Add the almond meal, sweetener, almond extract ,salt and lemon zest and mix to combine.
If It will seem dry at first - keep working with a spoon or your hands.if it's too wet - add more almond meal .Dough texture must be thick enough to roll a small balls.
Take teaspoons of the mixture and roll into balls in your hands then roll in powdered Natvia.
Place onto the baking tray, leaving a little room in between.
Using a finger, flatten slightly and add an almond in the middle (optional ).
Bake for 15 minutes.
