Low Carb Cherry Ricotta Tart
Ingredients
1.5 cup Almond Meal
0.5 cup Fresh Shredded Coconut
0.5 cup Rolled Oats
0.75 cup Natvia
0.25 teaspoon Ginger
0.25 teaspoon Cinnamon
0 Pinch of salt
120 g Melted Butter
1 teaspoon Vanilla Extract
300 g Fresh Cherries
0.25 cup Orange Juice
1 Stick Cinnamon
3 Cloves
3 Cardamon Pods
1 teaspoon Ginger
0.66 cup Natvia
500 g Smooth Ricotta
1 teaspoon Vanilla Extract
1 Zest from 1 Orange
0.33 cup Natvia
0 Flaked Almonds (toasted - to sprinkle on the tart)
Method
- Preheat oven to 160°C Fan.
- Start by adding 1 & 1/2 Cups almond meal to a mixing bowl.
- Add 1/2 cup fresh shredded coconut, 3/4 cup Natvia, 1/4 tsp ginger, 1/4 tsp cinnamon, 1/2 cup rolled oats, and a pinch of salt to the bowl and stir it all together until evenly mixed around.
- Add 120g of melted butter to the mixture, as well as 1 tsp Vanilla Extract.
- Stir this thoroughly until it has become a wet mixture and has fully combined.
- Lay the crust wet mixture into a baking tray (round) and push the edges down to form a base.
- Bake the crust base at 160°C fan for 20 minutes or until the crust goes brown.
- Place 300g fresh cherries (without stems, pitted, and halved) in a saucepan.
- Squeeze a fresh orange and add 1/4 cup orange juice to the cherries.
- Add 1 stick of cinnamon (snapped in half), 3 cloves, 3 cardamon pods, 1 tsp ginger, 2/3 cup Natvia, and stir the mixture.
- Add the mix to medium to low heat and let it simmer with the lid on the saucepan for approx. 10 minutes (until the mixture has orange residue on the top layer - set aside to cool).
- Once cooled, drain the cherries of the liquid that it has been simmering in.
- Add 500g fresh smooth ricotta to a mixing bowl, along with 1 tsp Vanilla Extract, zest from 1 orange, and 1/3 cup Natvia.
- Blend the mixture together with an electric whisker.
- Once mixed completely, set aside.
- Take the crust out of the oven if you have not already.
- Slowly evenly spread the Ricotta Filling across the top of the crust/tart.
- Once evenly spread, top the Ricotta Filling with the Cherry Compote.
- Sprinkle orange zest across the top of the finished tart for extra citrus flavour.
- Also sprinkle toasted flaked almonds across the top of the tart for a tasty and healthy crunch.
