Mango Coconut Muffins

Ingredients

3 cups self-raising flour ½ cup Natvia natural sweetener ¾ cup desiccated coconut 1 ¼ cup coconut milk 2 eggs, lightly whisked 150g butter, melted 350g mango, diced into small cubes

Method

  1. Preheat oven to 180ºC. In a bowl, combine flour, Natvia and desiccated coconut and stir to combine.
  2. Make a well in the centre and add coconut milk, eggs and melted butter. Stir mixture until just combined.
  3. Add chopped mango, and stir again lightly to disperse fruit through the batter.
  4. Bake for 20-25 minutes until an inserted skewer comes out clean. Allow to cool for 10 minutes on a cooling rack before serving.
