Passionfruit Yoyos

Ingredients

  • 125g unsalted butter, softened 🧈
  • 80g Natvia 100% Natural Sweetener, sifted 🍯
  • 1 tsp vanilla extract 🍦
  • 25g custard powder 🥛
  • 175g plain flour 🌾

For the filling:

Method

  • Reheat oven to 180°C (350°F). Line two large baking trays with baking paper.
  • Beat butter and Natvia 100% Natural Sweetener together until light and fluffy. Stir in vanilla extract.
  • Sift together custard powder and plain flour. Gradually add to the butter mixture, mixing until a dough forms.
  • Roll dough into small balls, place on prepared trays, and flatten with a fork.
  • Bake for 12-15 minutes until golden. Let cool completely.
  • For the filling, beat butter and Natvia until light and fluffy. Stir in passionfruit pulp.
  • Spread filling on one biscuit, top with another.

Serve and enjoy!

Tips:

  • For a richer flavor, use almond flour instead of some or all of the plain flour.
  • Experiment with different fillings like lemon curd or chocolate ganache.
