
Passionfruit Yoyos
Ingredients
- 125g unsalted butter, softened 🧈
- 80g Natvia 100% Natural Sweetener, sifted 🍯
- 1 tsp vanilla extract 🍦
- 25g custard powder 🥛
- 175g plain flour 🌾
For the filling:
- 80g Natvia 100% Natural Sweetener, sifted 🍯
- 100g unsalted butter, softened 🧈
- 2 tbsp passionfruit pulp 🍇
Method
- Reheat oven to 180°C (350°F). Line two large baking trays with baking paper.
- Beat butter and Natvia 100% Natural Sweetener together until light and fluffy. Stir in vanilla extract.
- Sift together custard powder and plain flour. Gradually add to the butter mixture, mixing until a dough forms.
- Roll dough into small balls, place on prepared trays, and flatten with a fork.
- Bake for 12-15 minutes until golden. Let cool completely.
- For the filling, beat butter and Natvia until light and fluffy. Stir in passionfruit pulp.
- Spread filling on one biscuit, top with another.
Serve and enjoy!
Tips:
- For a richer flavor, use almond flour instead of some or all of the plain flour.
- Experiment with different fillings like lemon curd or chocolate ganache.
