Sweet Potato S'more Cake

Ingredients

  • 1 sweet potato, peeled and cut into cubes, cooked and cooled 
  • 100g gluten-free flour 
  • 100g Natvia 100% natural sweetener 
  • 1 teaspoon cinnamon 
  • 1 tablespoon melted coconut oil   
  • 100ml oat milk  
  • 2 tablespoons nut butter 
  • 1 teaspoon vanilla extract 
  • 50g no added sugar chocolate chips 
  • 50g no added sugar chopped dark chocolate  
  • 30g no added sugar mini marshmallows 

Method

  1. Blend the cooked sweet potato, flour, Natvia, cinnamon, oil, milk, nut butter and vanilla until a batter has formed. 
  2. Spoon this into a greased 20cm cake tin then spread out evenly. 
  3. Sprinkle over the chocolate chips, chopped chocolate and marshmallows all across the top.  
  4. Bake at 180C for 30 minutes (cover with tin foil after about 10 minutes to prevent the marshmallows from burning). Leave to cool a little then remove from the tin and slice up while still warm, and enjoy!
