If you're looking for a treat that looks indulgent, tastes incredible and is actually made with better-for-you ingredients, these Peanut Butter Chocolate Granola Cups are exactly that. Dreamed up by Pamela Higgins, these layered beauties combine an oaty base, a rich chocolate protein middle and a creamy vanilla top; all sweetened with Natvia Synbiotic Sweetener and finished with a scattering of crunchy granola. Made in a silicone muffin tin and set in the fridge, they require no baking and are completely refined sugar-free. They're the kind of recipe that looks like you've put in serious effort, when really they couldn't be simpler.

Ingredients

For the base:

  • 70g oats 
  • 2 tablespoons nut butter 
  • 1 tablespoon Natvia Synbiotic sweetener 
  • 1 tablespoon oat milk 

For the middle:

  • 1 tablespoon coconut oil 
  • 2 tablespoons smooth nut butter 
  • 2 tablespoons Natvia Synbiotic sweetener 
  • 2 scoops chocolate protein powder (or oat / almond flour) 
  • 2 tablespoons cocoa powder  

For the topping:

  • 1 tablespoon coconut oil 
  • 2 tablespoons smooth nut butter 
  • 2 tablespoons Natvia Synbiotic sweetener 
  • 2 scoops vanilla protein powder (or oat / almond flour) 
  • Granola, to decorate 

Method

  1. First make the base: Mix together the oats, nut butter, Natvia and milk to form a soft dough that comes together. Divide between a 6-hole silicone muffin tin and fill each to ⅓. Press down well and set aside. 
  2. Next melt the coconut oil and nut butter, then remove from the heat and add in the Natvia, protein powder/flour and mix until combined. Spoon this over each base and fill each up to ⅔. Chill in the fridge for 30 minutes. 
  3. Once ready, melt the coconut oil for the topping along with the nut butter then remove from the heat and mix in the protein powder/flour. Spoon this over the middle layer to fill to the top. 
  4. Sprinkle over granola to cover each then chill in the fridge for at least 1 hour. Then when ready to eat, pop out of the silicone mold and enjoy!
