Spiced Carrot, Apple Breakfast Muffins

Ahhhh, there is nothing better than biting into a warm, moist muffin as the weather starts to cool off. So healthy, these nutrient dense muffins are made with oatmeal and almond flour, apples and carrots. Great with a pat of butter or a smear of cream cheese with your morning coffee or tea. Or just pop a mini muffin or two into your mouth for a hearty afternoon snack.

Ingredients

  • 1/2 cup/(120ml) whole oats
  • 1/2 cup/(120ml) almond meal
  • 1/4 cup/(60ml) all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ cup/(180ml) Natvia
  • 2 eggs
  • 1/4 cup/(60ml) almond milk
  • 1 carrot, grated
  • 1 apple, grated
  • 1/4 tsp fresh ginger, grated
  • 5 dates, chopped
  • ½ cup/(120ml) raisins

Method

  1. Preheat oven to 180 degrees Celsius/355 degrees Fahrenheit.
  2. Process oats in a food processor until a flour-like consistency is reached.
  3. Add the almond meal, flour, baking powder, spices and Natvia. Pulse a few times until mixed.
  4. Add whisked eggs and milk and process.
  5. Add the grated carrot, apple, ginger, dates and raisins and pulse until well combined and carrots/apples are at desired size.
  6. Spoon or scoop with an ice cream scoop into a sprayed or greased muffin tray of your choice.
  7. Bake for around 25-30 minutes or until golden.
