Spicy Sweet and Sour Fried Eggs

Eggs for dinner is always a good idea, and this version makes a strong case for why. A crispy pan-fried egg sitting in a glossy, garlicky sweet and sour sauce with just enough chili oil heat to keep things interesting. The sauce comes together in the same pan and thickens beautifully around the eggs as it simmers. Ten minutes, one pan, genuinely satisfying over a bowl of hot rice.

Ingredients:

  • 4 large eggs
  • Neutral oil, for frying
  • 1 tablespoon tomato sauce
  • 1.5 tablespoons soy sauce
  • 0.5 tablespoon rice vinegar
  • 2/3 teaspoon Natvia Gut Activation Sweetener (AU) / Natvia Synbiotic Sweetener (UK)
  • 1 tablespoon garlic, minced
  • 1.5 tablespoons chilli oil, adjust to taste
  • 1/4 cup water
  • 2 tablespoons cornstarch
  • Spring onion, thinly sliced
  • Sesame seeds
  • Cooked jasmine rice

Method:

  1. In a bowl, whisk together the tomato sauce, soy sauce, rice vinegar, Natvia Gut Activation Sweetener, garlic, chilli oil, water and cornstarch until smooth. Set aside.
  2. Drizzle oil into a pan and heat over medium-high. Once hot, crack in the eggs and pan-fry for 2 to 3 minutes until the edges are golden and crispy.
  3. Pour the sauce over the eggs and let it simmer for 2 to 3 minutes until thickened and glossy.
  4. Serve immediately over hot jasmine rice, garnished with spring onion and sesame seeds.
