White Chocolate, Strawberry & Coconut Granola

Wake up to a breakfast that feels like a celebration with this White Chocolate, Strawberry & Coconut Granola. This recipe takes your standard morning bowl to a whole new level by combining the crunch of toasted coconut and oats with the creamy indulgence of no-added-sugar white chocolate.

Ingredients

  • 120g oats
  • 3 tablespoons coconut oil
  • 3 tablespoons nut butter of choice
  • 3 tablespoons Natvia Synbiotic sweetener
  • 40g desiccated coconut
  • 50g no added sugar white chocolate, cut into chunks 
  • 40g freeze-dried strawberries 

Serve with: stewed berries and natural / coconut yogurt 

Method

  1. Place the oats in a bowl. Heat up the coconut oil and nut butter until melted then add into the bowl along with the Natvia and mix well to combine.
  2. Spread this mixture out onto a lined baking sheet and bake at 180C for 8 minutes. Remove from the oven, mix in the desiccated coconut and return for a further 4 minutes.
  3. Add in the chocolate chunks and mix again. Bake for a further 3-4 minutes then mix gently. Allow to stand and cool completely, the mix in the freeze dried strawberries and de-cant into kilner / air tight jars.
