Ingredients:

SAUCE

  • 2½ tbsp dark soy sauce
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 1⅓ tsp Natvia Brown Sweetener
  • ½ tsp rice wine vinegar

STIR FRY

  • 2 packets udon noodles (about 400g, vacuum packed or frozen)
  • 2½ cups chopped vegetables (bok choy, onion, capsicum and carrot work well)
  • 2 spring onions, cut into 5cm lengths
  • 1 tbsp neutral oil

Methods:

  1. Whisk the sauce ingredients together in a small bowl until the Natvia Brown Sweetener has dissolved. Set aside.
  2. Drop the udon into a pot of boiling water and gently loosen with tongs until the noodles separate, about 1 to 2 minutes. They are precooked, so do not leave them longer or they will go soft. Drain and rinse under cold water.
  3. Heat the oil in a large pan or wok over high heat. Add the vegetables and stir-fry for 2 to 3 minutes until just tender but still with some bite.
  4. Add the noodles and pour the sauce over. Toss everything together for a minute or two until the noodles are coated and glossy.
  5. Stir through the spring onions and serve hot.
