Zucchini and Oat Waffles

Anyone who has woken up to a plate of fresh, warm waffles knows the complete joy and happiness associated with this dish. Unfortunately, as nice as it is to wake up to waffles every morning it's not quite the health kick we're looking for to start our day. That is unless you think healthy! Waffles and its various combinations can be turned into a nutritiously packed treat. Adding fruits, healthy fats and proteins, you can turn waffles into a regular weekend meal. To get you thinking of ways in which you can healthify your waffles, start with this simple, tasty and guilt-free recipe. Makes 1 large waffle

Ingredients

160 mls Egg whites

50 g Zucchini (raw)

50 g Low fat cottage cheese

55 g Natural protein oats (which is oats with almond meal and flax seeds)

3 g Psyllium husk

2 teaspoon Navis

0 For a savoury twist – pinch pink Himalayan Salt

Method

  1. Prepare the mixture by placing all of the above ingredients into a NutriBullet or Blender on high speed until a creamy texture is formed.
  2. Place the mixture into the fridge to thicken for 5 – 10 min. This is achieved through the Psyllium husk, a fiber which soaks up liquid and will help the mixture thicken naturally.
  3. Preheat the waffle maker as per the manufacturer instructions.
  4. I usually use a basting brush to brush on a touch of flax seed oil to avoid the waffle sticking.
  5. Place the mixture into the waffle maker and cook as per manufacturer instructions.
