Almond Butter Blondies

Ingredients

62 g Unsalted Butter (1/4 Cup), Softened

187 g Smooth Almond Butter (3/4 Cup)

2 Eggs

95 g Natvia (1/2 Cup)

1 tablespoon Vanilla

100 g Gluten Free Self Raising Flour (3/4 Cup)

0.25 teaspoon Salt

120 g Sugar Free White Choc Chips (3/4 Cup)

Method

  1. Preheat oven to 180C. Line an 8-inch-square baking with baking paper.
  2. Beat butter and almond butter in a mixing bowl with an electric mixer until creamy. Beat in eggs, Natvia and vanilla. Add flour and salt into the bowl and stir to combine
  3. Stir in chocolate chips. Spread the batter evenly into the prepared pan.
  4. Bake for 25-30 minutes or until a toothpick inserted into the centre comes out with just a few moist crumbs on it. Let it cool in the pan for 45 minutes.
  5. Cut into squares, enjoy!
