Banana Salted Caramel Muffins
Ingredients
0.66 cup wholewheat pastry flour
0.66 cup vanilla protein powder
0.25 cup Natvia
250 g banana, mashed
0.25 cup coconut oil, melted
0.75 teaspoon baking powder
0.75 teaspoon baking soda
0.5 teaspoon cinnamon
0.25 teaspoon salt
0.33 cup almond milk
2 cup dates, seeds removed
0.25 cup maple syrup
0.5 cup natural peanut butter, melted
2 tablespoon unsweeteneed almond milk
0.25 teaspoon salt
0 To top, oats
Method
- Preheat your oven to 175C, and line a muffin tin with muffin pans
- Mix together the muffin ingredients in a large bowl.
- Blend together all the ingredients for the caramel centre.
- Fill the muffin pans halfway with the muffin mixture, then add the caramel centre before topping with the remaining muffin mixture
- Top with a sprinkle of oats for added crunch (you could also use granola or chopped nuts)
- Bake for 20-25 minutes.
