
Banana Salted Caramel Muffins

Ingredients
Muffin:
2/3 cup wholewheat pastry flour
2/3 cup vanilla protein powder
1/4 cup Natvia
250 g banana, mashed
1/4 cup coconut oil, melted
3/4 tsp baking powder
3/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt
1/3 cup almond milk
Caramel Centre:
2 cups dates, seeds removed
1/4 cup maple syrup
1/2 cup natural peanut butter, melted
2 tbsp unsweeteneed almond milk
1/4 tsp salt
To top, oats
Method:
1. Preheat your oven to 175C, and line a muffin tin with muffin pans
2. Mix together the muffin ingredients in a large bowl.
3. Blend together all the ingredients for the caramel centre.
4. Fill the muffin pans halfway with the muffin mixture, then add the caramel centre before topping with the remaining muffin mixture
5. Top with a sprinkle of oats for added crunch (you could also use granola or chopped nuts)
6. Bake for 20-25 minutes.
