Beetroot & Vanilla Slices

Ingredients

For the base -

  • 150g oats
  • 1 banana, mashed
  • 2 tablespoons beetroot powder (or equivalent)
  • 90g Natvia Synbiotic natural sweetener
  • 100ml oat milk
  • 2 tablespoons oil
  • 2 tablespoons smooth nut butter
  • 1 teaspoon vanilla extract 

For the topping -

  • 200g Quark or Greek yogurt
  • 3 tablespoons Natvia Synbiotic natural sweetener
  • Dash of vanilla extract
  • (Optional: scoop of vanilla protein powder)
  • Granola, to sprinkle
  • Dried rose petals, to decorate

Method

1. Make the base: Blend all of the base ingredients until combined then spoon into a greased and lined loaf tin to fill ⅔ of the way up.

2. Bake at 180C for 30-35 minutes until firm and golden, then leave to cool.

3. Meanwhile mix together the Quark/yogurt, Natvia, vanilla and protein powder (if using) and keep in the fridge until needed.

4. Once the loaf part has cooled, spread this over the loaf to cover then sprinkle over granola and rose petals. 

5. Pop out of the tin, slice up and serve!
