Berries and Cream Pancakes

Ingredients
Pancakes:- 1/2 cup rolled oats
- 1 tbsp coconut flour
- 1/2 each Banana, sliced
- 3/4 cup combination of coconut cream and coconut water
- 1 tsp Natvia
- 1/2 tsp Baking soda
- 1/2 tsp Apple Cider vinegar
- 1/2 tsp Vanilla Extract
- 1 cup/120g/4.2 oz frozen strawberries
- 1/4 cup/37g/1.3 oz Frozen Blueberries
- 1 tsp Natvia
- 1/4 cup/60ml/2 oz Coconut water more as needed
Method
- Starting with the Pancakes, blend all ingredients in a blender until smooth.
- Cook over medium heat in some coconut oil.
- Making the Berry Compote, simmer al ingredients for 10 minutes stirring occasionally until broken down and thickened to desired consistency.
- Pour over pancakes
- Drizzle over some more coconut cream. Top with some additional chopped fresh strawberries and your favourite fruits. Enjoy!
