Ingredients

Cookies:
  • 3/4 cup/175g Butter
  • 3/4 cup + 1 tbsp/150g Natvia Sweetener 
  • 2 drops cinnamon extract
  • 1/2 tsp Ground cinnamon
  • 1 tsp Vanilla Extract
  • 1 2/3 cup/150g fine almond flour
  • 1 1/2 tbsp/10g coconut flour
  • 2 Egg yolks
  • 3 tsp Egg white
  • Cinnamon Sugar:
  • 1/3 cup + 1 tbsp/75g Natvia Sweetener 
  • 1 tsp Ground cinnamon

Method

  1. Starting with Cookies, First step, preheat oven to 80 C. Line a baking sheet with baking parchment.
  2. Mix butter, sugar substitute, extracts together (easiest done in food processor if you have one), then add egg yolks and the tbsp of egg white.
  3. Mix well, then add rest of ingredients.
  4. Take walnut size pieces of dough and shape into balls. Roll in cinnamon sugar, place on cookie sheet lined with baking parchment and press down lightly on each.
  5. Bake until lightly golden for 10 - 12minutes.
  6. Making the Cinnamon Sugar all you need to do is, combine both ingredients together.
