Snickerdoodles

Ingredients
Cookies:- 3/4 cup/175g Butter
- 3/4 cup + 1 tbsp/150g Natvia Sweetener
- 2 drops cinnamon extract
- 1/2 tsp Ground cinnamon
- 1 tsp Vanilla Extract
- 1 2/3 cup/150g fine almond flour
- 1 1/2 tbsp/10g coconut flour
- 2 Egg yolks
- 3 tsp Egg white
- Cinnamon Sugar:
- 1/3 cup + 1 tbsp/75g Natvia Sweetener
- 1 tsp Ground cinnamon
Method
- Starting with Cookies, First step, preheat oven to 80 C. Line a baking sheet with baking parchment.
- Mix butter, sugar substitute, extracts together (easiest done in food processor if you have one), then add egg yolks and the tbsp of egg white.
- Mix well, then add rest of ingredients.
- Take walnut size pieces of dough and shape into balls. Roll in cinnamon sugar, place on cookie sheet lined with baking parchment and press down lightly on each.
- Bake until lightly golden for 10 - 12minutes.
- Making the Cinnamon Sugar all you need to do is, combine both ingredients together.
