
Blackberry Apple Crumble Bars
Intro
Indulge in the perfect blend of sweet and tart with these delightful Blackberry Apple Crumble Bars! Bursting with juicy blackberries and tender apples, all topped with a buttery crumble, they make for a fantastic snack or dessert that everyone will love.
Ingredients
For the base
- 80g margarine or coconut oil
- 100g gluten-free flour
- 50g Natvia Synbiotic sweetener
- 1-2 tablespoons oat milk
- ½ teaspoon almond extract
For the blackberry apple filling
- 170g fresh blackberries
- 1 large apple, diced
- 2 tablespoons Natvia Synbiotic sweetener
- 1 tablespoon lemon juice
For the crumble topping -
- 50g margarine or coconut oil
- 40g gluten-free flour
- 20g oats
- 30g Natvia Synbiotic sweetener
- 1 tablespoon peanut or almond butter
Method
- First rub the margarine or coconut oil into the flour and sweetener until a crumble mixture forms. Then add in the milk and almond extract so the mixture comes together to form a dough.
- Press this into a 9x9in baking tin to cover the base in a generous layer. Set aside.
- Meanwhile, place the blackberry filling ingredients in a pan and simmer on a medium-high heat for 10 minutes until soft, mushy and nearly all of the liquid has evaporated. Set aside to cool.
- Make the crumble topping: rub the margarine or coconut oil into the flour, oats and sweetener until a crumble mixture forms then stir through the nut butter.
- Spoon the blackberry filling over the base to cover, then sprinkle over the crumble to generously cover.
- Bake for 30 minutes (you may need to cover with foil halfway) then leave to cool. Remove from the tin and cut into slices. Enjoy!
