
Mixed Berries & Pistachio Baked Oats
Intro
Start your day with a burst of flavor and nutrition! This Mixed Berries and Pistachio Baked Oats recipe is a delicious and wholesome breakfast option. Packed with juicy berries, crunchy pistachios, and the goodness of oats, it's a perfect blend of flavors and textures.
Ingredients
- 150g oats
- 80g Natvia Synbiotic sweetener
- 2 tablespoons flaxseed
- 1 teaspoon cinnamon
- 1 mashed banana
- 350ml oat milk
- 1 teaspoon vanilla extract
- 4 tablespoons natural / coconut yogurt
- 100g mixed berries
- Large handful chopped pistachios
Method
- First mix the oats, sweetener, flaxseed and cinnamon together in a bowl.
- Mix together the mashed banana, milk and vanilla then pour into the bowl and mix well.
- Spoon the mixture into an ovenproof dish and spread out evenly. Spoon over the yogurt and swirl around with a knife, then scatter over the berries.
- Bake at 180C for 25-30 minutes until golden and firm. Remove from the oven, scatter over the pistachios then enjoy hot or cold.
