Mixed Berries & Pistachio Baked Oats

Ingredients

  • 150g oats 
  • 80g Natvia Synbiotic sweetener 
  • 2 tablespoons flaxseed 
  • 1 teaspoon cinnamon 
  • 1 mashed banana 
  • 350ml oat milk 
  • 1 teaspoon vanilla extract 
  • 4 tablespoons natural / coconut yogurt 
  • 100g mixed berries 
  • Large handful chopped pistachios 

Method

  1. First mix the oats, sweetener, flaxseed and cinnamon together in a bowl. 
  2. Mix together the mashed banana, milk and vanilla then pour into the bowl and mix well. 
  3. Spoon the mixture into an ovenproof dish and spread out evenly. Spoon over the yogurt and swirl around with a knife, then scatter over the berries. 
  4. Bake at 180C for 25-30 minutes until golden and firm. Remove from the oven, scatter over the pistachios then enjoy hot or cold.
